Ingredients:
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1 large egg
- 1/2 cup molasses
- 3 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground black pepper optional, for extra spice
- 1/2 cup chocolate chips optional, for added chocolate flavor
Instructions:
In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy
Add the egg and molasses to the mixture, and mix until well combined
In a separate bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, ginger, cinnamon, cloves, nutmeg, and black pepper if using
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms
If desired, mix in the chocolate chips
Divide the dough into two equal portions, flatten each portion into a disc, and wrap them in plastic wrap
Chill the dough in the refrigerator for at least 2 hours or overnight
Preheat your oven to 350F 175C and line baking sheets with parchment paper
On a floured surface, roll out one portion of the dough to about 1/4 inch thickness
Use cookie cutters to cut out desired shapes and place them on the prepared baking sheets
Repeat the rolling and cutting process with the remaining dough
Bake the cookies in the preheated oven for 8-10 minutes or until the edges are slightly firm
Remove the cookies from the oven and let them cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely
Once cooled, you can decorate the cookies with icing, sprinkles, or leave them as they are
