A comforting and nutritious vegan miso soup filled with tofu, kale, and aromatic flavors. Perfect for a cozy meal on a chilly day.
Ingredients:
- 4 cups vegetable broth
- 1 tablespoon miso paste
- 1 block tofu, cubed
- 2 cups chopped kale
- 2 green onions, sliced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon grated ginger
- 1 clove garlic, minced
- 1 tablespoon rice vinegar
Instructions:
Set vegetable broth on low heat in a pot
Mix some hot broth with miso paste in a small bowl and stir it around until it's smooth
Mix the miso well before adding it to the pot
Put the kale and tofu cubes in the pot and cook for 5 minutes
Green onions, soy sauce, sesame oil, grated ginger, and minced garlic should all be added now
For another two minutes, let the soup simmer
Take it off the heat and add the rice vinegar
Enjoy while hot!
