Ingredients:
- 1 can chickpeas, drained and rinsed
- 2 tablespoons buffalo sauce
- 2 tablespoons blue cheese, crumbled
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 4 slices whole grain bread
- 2 tablespoons olive oil
- 2 tablespoons green onions, chopped optional, for garnish
- 2 tablespoons celery, finely chopped optional, for garnish
Instructions:
Use a fork or potato masher to mash the chickpeas in a bowl until they are mostly smooth
To the mashed chickpeas, add blue cheese, lemon juice, salt, and pepper
Mix everything together well
Toast the pieces of bread until they are crispy and golden brown
Spread olive oil on top of the toasted bread
