Gluten-Free Pecan Pie Bars



These gluten-free pecan pie bars are a delightful treat that's free from gluten, dairy, and eggs. With a crunchy oat and almond flour base topped with caramelized pecans, they are perfect for satisfying your sweet cravings.

Ingredients:

  • 1 1/2 cups gluten-free rolled oats
  • 1/2 cup almond flour
  • 1/2 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1/2 cup coconut sugar
  • 1/4 cup almond butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 1/2 cups pecan halves

Instructions:

Preheat the oven to 350F 175C

Line an 8x8-inch baking dish with parchment paper

In a mixing bowl, combine the rolled oats, almond flour, melted coconut oil, maple syrup, coconut sugar, almond butter, vanilla extract, and salt

Mix until well combined

Press the mixture evenly into the bottom of the prepared baking dish

Arrange the pecan halves on top of the oat mixture

Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the pecans are toasted

Allow the bars to cool completely in the baking dish before slicing into squares

Serve and enjoy!
