Healthier Veggie Fried Rice



Enjoy this healthier version of classic fried rice made with brown rice and loads of colorful vegetables. The air fryer gives it a delightful crispy texture without the need for excess oil.

Ingredients:

  • 2 cups cooked brown rice
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced carrots
  • 1 cup diced bell peppers red, green, or yellow
  • 1 cup frozen peas
  • 2 eggs, beaten
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon sesame oil
  • Salt and pepper to taste
  • Green onions, chopped for garnish

Instructions:

Get your air fryer ready by heating it up to 370F 188C

Break up the cooked brown rice into large pieces and put them in a large bowl

In a pan, heat the olive oil over medium-high heat

Put in the bell peppers, onions, garlic, and onions

To make the vegetables soft, stir-fry them for three to four minutes

Stir-fry the frozen peas for two more minutes after adding them to the pan

Remove some of the vegetables from one side of the pan and add the beaten eggs to the other

After cooking the eggs all the way through, mix them with the vegetables

Add the egg and vegetable mixture that has been cooked to the bowl of rice

Sesame oil, rice vinegar, and soy sauce should be added

Combine well by mixing

Add pepper and salt to taste

Spread out the fried rice mixture in an even layer in the air fryer basket

Air fry the fried rice at 370F 188C for 5 to 7 minutes, stirring every two minutes, until it's hot all the way through and just a little crispy

Add some chopped green onions on top, and serve hot
