Ingredients:
- 2 large tomatoes, diced
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh mint, chopped
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions:
In a large bowl, combine diced tomatoes, cucumber, red bell pepper, red onion, parsley, and mint
Drizzle olive oil and lemon juice over the salad
Season with salt and pepper to taste
